Lactic acid is an organic acid fermented product that is widely used in the food, cosmetic, pharmaceutical, textile, and chemical industries so that every year the demand for production increases. Fermented production of lactic acid will produce lactic acid with pure isomers involving microorganisms such as L. rhamnosus bacteria that are reported to be able to produce lactic acid with high productivity compared to other types of Lactobacillus bacteria. The utilization of agro-industrial waste as a substrate on lactic acid fermentation gets great attention because it can support the productivity of lactic acid with abundant availability of raw materials, low cost, and environmentally friendly. Fermented lactic acid production has been widely carried out and reported from various types of agro-industrial waste. This review provides information on recent advances in fermented lactic acid production by utilizing agro-industrial waste using strains of L. rhamnosus bacteria.
